Recipes / Tofu and lentils

This is a great quick and easy supper. The balsamic vinegar and lemon are perfect with tofu and lentils. And if you have any leftovers it packs a punch in a lunchbox.
Ingredients
Half pack of tofu
1 cup of green lentils
2 cloves of garlic
Balsamic vinegar
Juice of 1/2 lemon
Method
1. Cook the green lentils in boiling water with the garlic cloves until they are soft, but not mushy.
2. Heat a little olive oil in a frying pan and throw in the lentil and garlic.
3. Add a good splash of balsamic vinegar and cook for 4 minutes.
4. Add the lemon juice, cook for a further 2 minutes.
5. Serve.
