Moroccan dynamite in one dish - which means less washing up.
This simple spice recipe is designed to add to any Moroccan tagine - be it a lamb, egg, fish or just plain vegetables.
Ingredients
1 tsp Coriander seeds
1 tsp Cumin seeds
1/2 tsp Fennel seeds
1/2 Carraway seeds
Method
1. Heat a non stick pan on a medium heat.
2. Add all the ingredients.
3. Dry fry for 2 minutes or until you hear the seeds begin to pop. Do not allow them to brown or burn.
4. Turn the ingredients into a pestle and mortar.
5. Grind until the spices form a smooth powder.
