How do you like your eggs in the morning? We love this mexican dish for Sunday brunch. Serve with some bread to soak up all the juice.
Ingredients
Serves 2
1 onion diced
1 garlic clove crushed
1 red pepper sliced
1 tin of tomatoes or 5 fresh
1 chili
2 eggs
handful of coriander
Method
1. Sweat the onions until they are soft and brown.
2. Add garlic and chili and cook for a couple of minutes.
3. Add the peppers and continue to cook gently for 5 minutes.
4. Add the tomatoes and cook for 20 mins .
5. Make a space in the sauce and crack in the eggs. Cover with a plate and let them poach for 4 minutes.
5. Serve with crusty bread.
