We first tasted this in Morocco's Atlas Mountains. It was one of their worst winters and we camped out in the snow. This recipe is serious comfort food - a perfect combination of potatoes, tomatoes and eggs.
Ingredients
1 medium onion
3 medium potatoes
1 clove of garlic
2 tsps of Tagine spice (see our recipe for this)
8 fresh tomatoes
2 free range organic eggs
150ml vegetable stock
1/2 tbsp of olive oil
Handful of coriander
Salt and pepper to taste
You will need a tagine pot for this recipe.
Method
1. Peel and chop the potatoes into chunks, finely chop the onion and slice the tomatoes.
2. Layer the potatoes on the bottom of your dish.
3. Sprinkle the potatoes with 1 tsp of tagine spice
4. Layer the onions, garlic and more tagine spice.
5. Layer the tomatoes, a little more tagine spice and half of the chopped coriander.
6. Add the stock, olive oil and salt and pepper.
7. Place on the hob on a medium heat.
8. When the stock starts to bubble turn down to a simmer.
9. When the tomatoes have softened into a sauce, make two holes and crack in the eggs.
10. Cook until the eggs have poached perfectly. (roughly 2 - 3 mins)
11. Serve with the rest of the coriander.
