This roasted tomato sauce is rich, tasty and perfect for pasta. A great recipe for when you have a glut of tomatoes from your garden. Cook up and freeze.

Ingredients

10 fresh vine tomatoes.

3 cloves of garlic

Handful of basil leaves

Glug of olive oil

Salt and pepper

Method

1. Place the tomatoes in a baking tray.

2. Throw in the basil leaves, whole garlic cloves a glug of oil and salt and pepper.

3. Roast at 180 for around 30 mins, or until the tomatoes start to break down.

4. Push the mixture through the sieve.

5. Use straight away or freeze to use later.
