Granted this recipe sounds a bit weird - but I guarantee its more than moorish. And it's a great lunchbox filler - or mid-morning snack.

Ingredients


5 large carrots
Glug of olive oil
1 tsp of ground carroway seeds
Handful of finely chopped mint

Method


1. Peel the carrots and chop them into rounds.

2. Put the carrots in a roasting tray with a glug of olive oil and roast for around 40 minutes until they are sweet and soft.

3. Let the carrots cool a little.

4. Mash up with a blender, or fork.

5. Mix in the carroway seeds and mint.

6. Serve with flatbread or on rice cakes.
