Okay, you can buy it in a jar and it tastes pretty good - but with a big pile of hot chips, nothing cuts the mustard quite like home-made mayonnaise.

Ingredients

2 egg yolks
1 tsp Dijon mustard
salt and pepper
1 small clove of garlic
1/2 tbsp white wine vinegar
juice of half a lemon
200ml vegetable oil

Method

1. Whisk egg yolk, mustard, salt and pepper until thick and almost puffy.

2. Squeeze in the lemon juice.

3. Drop a little oil in, spoonful by spoonful, whisking all the time.

4. Add a tiny drop of vinegar, then a little more oil.

5. Continue alternating like this, whisking all the time.

6. Finish pouring the oil in a thin, steady stream, keeping the whisking constant.

7. Taste. If you're eating with fish - add another good squeeze of lemon to taste.
