This is my staple salad dressing for summer lettuce but it's also delicious in the winter over potatoes.

Ingredients

3 tbsp olive oil
1 tbsp balsamic vinegar (but sherry and white wine vinegars work just as well)
1 tsp honey
1 tsp grainy mustard

Method

1. Pour all the ingredients into a jar and shake.

2. Taste - you may like it a little sweeter.
