My friend Gudren has become famous for her Tiramisu - so I've stolen her recipe. Her trick is not to over soak the sponge so that everything becomes gloopy.

Ingredients

500g Mascapone cheese
6 large eggs
170g sugar
2 packets of sponge fingers or trifle sponge
1.5 pints of cold coffee
shot of whisky
250g whipping cream
cocoa powder to serve

Method

1. Separate eggs.

2. Mix egg yolks and sugar until pale.

3. Beat egg whites until stiff.

4. Mix Mascapone into egg/sugar mixture.

5. Cut sponge into one inch chunks.

6. Add shot of whisky into the coffee.

7.Dip sponge into coffee. Make this a quick dip top and bottom, so they're not soaked.

8. Gently fold egg white into the mix.

9. Layer sponge with mixture - it doesn't need to be pretty.

10. Top with whipped cream.

11. Sprinkle with cocoa powder to serve.
