Hey, I'm a New Zealander - we're a little possessive about our Pavlova! This one is based on one from our answer to Delia - the Edmonds "Sure to Rise" cookery book and makes a very traditional looking pav.

Ingredients


3 egg whites
3 tbsp cold water
1 cup caster sugar
1 tsp vanilla essence
3 tsp cornflour
1 tsp vinegar

Method


1. Preheat the oven to 150 degrees C.

2. Use an elecrtic mixer and beat the egg whites until they stand in stiff peaks.

3. Add the water and beat.

4. Fold in the vinegar, vanilla essence and cornflour.

5. Line an oven tray with baking paper and spread in a circle onto the tray.

6. Or, if you prefer, line a 22cm cake tin with baking paper and pour the meringue inside.

7. Bake for 45 minutes in the oven and leave to cool in the oven. Try not to open the door.

8. Peel off paper and place onto cake tray. Cover with cream and seasonal fruit.
