With the recent spate of hot weather we've had, Elderflowers seem to be out early this year. With their delicate flavour - and short season - these fritters are a treat to savour.

Ingredients

8 -10 elderflowers
1 egg
100g self-raising flour
50g caster sugar
250g milk
zest of one lemon
110ml sunflower oil
juice of one lemon
honey to drizzle

Method

1.Pick the elderflowers (away from polluted roadsides) and gently shake off the dirt.

2.Beat together the egg, milk, flour and sugar.

3.Add the lemon zest.

4.Allow to sit for 20 minutes.

5.Heat the sunflower oil in a deep pan.

6.Dip each flower into the batter and fry flower down.

7.Flip over and fry the stem side.

8.Squeeze lemon juice and drizzle honey over the top.

9. Serve with freshly whipped vanilla cream.
