This is a great recipe for kids - they like to build and fold their own.

Ingredients

Makes 6

250g good beef mince
one onion
3 cloves garlic
2 tbsp olive oil
150g sweetcorn
100ml tomatoe puree
10 baby tomatoes
6 Tortilla flour wraps
1 iceberg lettuce
Grated cheese
Greek yogurt


Method

1. Finely chop onions and garlic.

2. Sautee with olive oil

3. Add mince, chopped baby tomatoes and tomatoe puree.

4. Simmer for 10 minutes.

5. Add sweetcorn when you take off the heat.

6. Wrap tortillas in tin foil and heat in the oven.

7. Shred iceberg lettuce.

8. Spread out wrap, add 2 tbsps of mince mixture, handful of lettuce, sprinkling of cheese and a dob of yogurt.

9. Roll and fold into an envelope.

10. Serve with chopped carrots and baby tomatoes.
