These amazing spices work brilliantly with lamb chops for a BBQ with a twist.
Ingredients
Lamb Chops
For the spice paste:
Teaspoon cumin seeds
Teaspoon coriander seeds
Teaspoon fennel seeds
1/2 cinnamon stick
Teaspoon black peppercorns
Pinch of cayenne pepper
2 teaspoons paprika
2 garlic cloves finely chopped
2 rosemary sprigs
2 teaspoons salt
2 tablespoons olive oil
Method
1. Toast all the cumin, coriander, fennel , cinnamon and peppercorns.
2. Crush with a pestle and mortar.
3. Crush the garlic and strip the rosemary sprig and chop the leaves finely.
4. Combine with remaining ingredients.
5. Rub the merguez into the chop and leave to marinade for 30 mins.
6. Cook on the BBQ.
