This was a throw it all in and see what happens kind of dish, that has now become a family favourite. Perfect for those winter days when you just can't get warm.

Ingredients

Serves 4

450g chorizo sausages chopped into 2cm chunks
two cans or 12 skinned cooked tomatoes
350 ml passata
250g puy lentils
1 red onion
2 garlic cloves
2 tsp Spanish paprika
1/2 bottle of red wine
1 tbsp olive oil
350g rice
Greek yogurt to serve

Method

1. Use a pot that can be used both on top of the stove and inside the oven to warm the olive oil.

2. Fry the onion and garlic.

3. Add the chorizo - keeping a watchful eye, as it burns easily.

4. Add the puy lentils.

5. Stir in the paprika.

6. Add the wine.

7.Let the flavours mix before adding the tomatoes and passata.

8. Cook for 2 - 2 1/2 hours in a 170 degrees celsius oven.

9. Serve with rice and natural yogurt.
