I saw this as one of those posh TV dinners and recreated my own version. It's delicious with rice - and becomes more like a paella.

Ingredients

Serves 10

1 sliced red pepper
2 sliced yellow peppers
6 skinned chicken breasts
2 tbsp white flour
2 tsp smoked paprika
1 litre chicken stock
2 cans chopped tomatoes or 12 skinned cooked tomatoes
450g chorizo sausage
one onion
4 cloves garlic
2 tbsp olive oil
1 cup of white wine.

Method

1. Cut the chicken into strips and coat in the flour and paprika.

2. Brown in olive oil and remove from pan.

3. Fry the onions and garlic until soft.

4. Add the peppers and cook until soft.

5. Add the chorizo and cook slowly - it can burn very easily.

5. Add the white wine and gently burn off the alcohol.

6. Add the tomatoes.

7. Add the stock.

8. Cook very slowly on top of the stove for 1 1/2 hours.

9. Serve with rice or buttery couscous.
