These are great with a glass of bubbly.

Ingredients

Makes about a dozen

1 cup of white flour
1 tsp baking powder pinch of salt
1 egg
3/4 cup of milk
butter to cook

Method

1.Sift dry ingredients together.

2.Beat the egg and milk together.

3.Combine with the the dry ingredients and whizz together until smooth.

4.You may need to add a little more milk if the mixture is too sticky - it should just coat the back of a spoon.

5.Heat and lightly grease a griddle or fry pan.

6.Spoon a tablespoon onto the pan and when the surface bubbles, flip over and cook the other side.

7.Cool.

8. Chop the salmon, place on top of the blini with a tiny squeeze of lemon and a dollop of horseradish sauce.
