Posh fish and chips. Serve with the mint pea dip.

Ingredients

5 Potatoes

Glug of Olive oil

Salt and pepper

Fillet of fish

Method

1. Peel your potatoes and chop into 1inch wedges.

2. Boil in water until you can almost get a knife through. Strain and allow to completely dry.

3. Heat the olive oil in a baking try

4. When the potatoes are dry toss them to rough up the surface and to the hot oil in the baking tray. Toss to ensure every potato is covered with oil and season with salt.

5. Cook on a high heat until crispy and golden brown.

6. When the potatoes are just turning golden and the fillet of fish in the middle and roast for a further 20 minutes.

7. Serve with the mint pea dip.
