This is a simple combination that's all about timing - the eggs and fish have to be cooked separately but at exactly the same time.

Ingredients

Four people

four pieces of smoked haddock
100g butter
.5kg Maris Piper potatoes or good mashers
3 cups of milk
4 eggs

Method

1.Peel and cook the potatoes.

2.Drain the potatoes and add 50g butter, 1 cup of milk, salt and pepper and mash.

3.Heat two cups of milk in a medium sized fry pan and add the fish.

4. While the fish is almost cooked - after about 8-10 minutes, add boiling water to another pot and crack in the eggs to poach.

5.Once the eggs and fish have cooked, serve with mashed potato on the bottom, then fish and the egg on top.
