I don't eat much seafood but I love mussels, especially when they are cooked with chilli.

Ingredients

1kg net of mussels

1 onion

3 cloves of garlic

1 chilli

Handful of parsley

1 can 400g chopped tomatoes

2tbsp tomato puree

400ml white wine

200ml double cream

Salt and pepper

Method

1. Wash and scrub the mussels

2. Chop the onion and garlic and fry gently until starting to turn brown.

3. Empty in the can of tomatoes and the 2 tbsp of tomato puree and the white wine.

4. Simmer for 30 minutes.

5. When the sauce has reduced and thickened add in the mussels and cook on a high heat until they have all opened.

6. Serve immediately with crusty bread to mop up the juice.
