This is a one dish wonder that has become a staple in our family. The ingredients melt on top of the fish, making for a tasty sauce.

Ingredients

400g lemon sole - or wild salmon.
150g baby spinich
1 1/2 tbs brown sugar
50g butter
25ml Tamari soya sauce
1 thumb ginger

Method

1. Heat oven to 170 degrees C - moderate heat.

2. Place spinich in the bottom of a lightly buttered baking dish.

3. Place fish on the top and sprinkle with brown sugar, soya sauce, salt and pepper.

4. Finely grate the ginger and sprinkle over the fish.

5. Add the knob of butter and cover with tinfoil.

6. Cook in the oven for around 20 minutes. Keep checking to ensure the fish isn't overcooking.
