A great alternative to the meaty version - and just as tasty.

Ingredients

Makes 4 burgers.

400g white fish - like Haddock
4 burger buns
50g butter
3 tbsp capers
juice 1 lemon
2 small grated carrots
half a finely cut cucumber
1 avocado
salad leaves

For the dressing
3 tbsp olive oil
1/2 tsp grainy mustard
1 tbsp balsamic vinegar - or vinegar of choice
1 tsp runny honey

Method

1. Put all salad ingredients in a bowl.

2. Shake all dressing ingredients in a jar until mixed and pour on the salad.

3. Cut the fish into four pieces.

4. Cut buns in half and toast in the oven.

5. Melt butter in a not too hot pan, squeeze in the lemon, and add the capers.

6. Add fish to the pan, keeping a constant eye not to overcook. Depending on your fish, it should only take a maximum of 7-10 mins.

7. Put all ingredients on the table for everyone to make their own burger.
