Red mullet has a very distinctive flavour - without being overpowering. Stuff with fennel and bay leaf - perfect for the BBQ.
Ingredients
1 red mullet, gutted and de-scaled
1/2 bulb of fennel
1 bay leaf
Salt and pepper
Method
1.Slice the fennel thinly.
2. Make sure your fish is totally dry - use a clean tea towel to dry off.
3. Brush the fish skin lightly with oil.
4. Stuff the red mullet with the fennel and the bay leaf.
5. Season with salt and pepper.
6. BBQ for about 3 to 4 minutes on each side. Make sure the grill is really hot or your fish will stick. Be decisive with your turning, or you will end up with a fish that has fallen apart.
