As far from a "worthy" chocolate cake as you can get - rich and delicious! Add some chopped pear or banana for an unusual twist.

Ingredients

Dry ingredients

1 1/2 cups flour
1tsp salt
1tsp bi-carb soda
1/3 cup coca powder
1 cup sugar

Wet ingredients

1/2 cup oil (veg or sunflower)
1 cup chilled coffee or chilled water
1tsp vanilla essence
2 tablespoons cider or redwine vinegar

Method

1. Pre-heat oven to 180.

2. Grease and line the cake tin.

3. Sift the dry ingredients into a bowl.

4. Mix the coffee, oil and vanilla in a separate bowl.

5. Mix the wet and dry ingredients together.

6. When mixed add the vinegar, and fold into mixture. This is the bit that can look a bit weird - but you should expect to see white trails in the mix as it reacts to the bi-carb.

7. Quickly pour into the cake tin.

8. Bake for 25-35 mins.
