Really simple recipe - change the golden syrup measurements to suit your taste.

Ingredients

100gm butter

20-30gms golden syrup

175 - 225gm demerera sugar

300g plain flour

2tsp baking powder

1tsp bicarbonate soda

3tsp ground ginger

Pinch of salt

1 egg beaten

Method

Makes 24 biscuits.


1. Pre heat the oven to 160C/Gas mark 3

2. Line two baking trays with greaseproof paper

3. Put the butter, sugar and syrup in a pan. On a medium heat melt the butter to melt, mix the ingredients together – then allow to cool.

4. Sift all the dry ingredients together.

5. Pour in the warm butter mix and combine with dry ingredients.

6. Add the beaten egg.

7. The mixture should be holding its shape.

8.Roll the mixture into balls roughly 1-2cm in diameter.

9.Place in the oven for 10 / 15 mins until they start to colour.
